2. SPAGHETTI SQUASH

Spaghetti squash is high in B vitamins and potassium, and low in fat, carbs and calories. It makes a perfect healthy alternative to traditional pasta! Cut the squash in half, remove the seeds, and season with extra virgin olive oil. Bake in the oven for 45 minutes at 400°F face-down on a baking sheet. Remove and let cool, then pull strands up using a fork. Top with our KALE PESTO hummus for an instant delicious meal!
