One of my favorite things about this recipe is the way you make the meatballs. Using a muffin tin to bake them in saves on a lot of cleanup time. It’s also an easy way to keep all of the meatballs separate for better, even cooking.

How do I make Meatballs?

Step 1: Heat the oven to 350.

Step 2: In a medium-sized mixing bowl, add each of your ingredients into the bowl and mix well after each addition. I find it best to use my hands versus a spoon.

Ingredients

  • 1/2 pound ground beef
  • 1/2 pound italian sausage
  • 1/2 cup plain bread crumbs KETO – use panko or almond flour
  • 1 tsp minced garlic
  • 2 eggs
  • 2 tsp finely chopped flat leaf parsley
  • 1/2 cup grated Parmigiano-Reggiano
  • 1 tsp salt
  • 1 tsp fresh ground pepper

Instructions

  • Heat oven to 350

  • Add meat, breadcrumbs (or Keto substitute), eggs, salt, pepper, parsley, and cheese to a medium bowl. Mix well.

  • Make larger than golf ball sized balls and keep them loosely packed. Toss them back and forth in your hands to help them form and keep them from packing to tightly.

  • Place in a muffin tin for easier cooking, and turn them 15 minutes in to the 30 minute cook time.

  • TIP: Replace the breadcrumbs with Panko or Almond Flour to make this recipe KETO friendly.

Notes

  1. The secret to cooking evenly is by LIGHTLY packing the meatballs. I do this by tossing them back and forth in my hands from left to right, right to left. Don’t pack tightly or they will cook unevenly.
  2. For easy cleanup, bake the meatballs in a muffin tin.
  3. For extra flavor, you can also grill these meatballs on the grill before adding them to any spaghetti or favorite dishes.
  4. Serve with your favorite marinara or serve naked without sauce.

FAQs

Why are my meatballs still pink after cooking? ›

Ground beef can be pink inside after it is safely cooked. The pink color can be due to a reaction between the oven heat and myoglobin, which causes a red or pink color. It can also occur when vegetables containing nitrites are cooked along with the meat.

Is it better to fry or bake Italian meatballs? ›

Baking will result in meatballs with a crunchy exterior, though the caramelisation achieved from frying will be superior. Baked meatballs take the least amount of effort, as you'll only need to turn them once or twice throughout the cook and you can make a larger batch at once.

What's the difference between Italian style meatballs and regular meatballs? ›

Italian-style meatballs often include additional ingredients such as milk, olive oil, ground pork, fresh parsley, red pepper flakes, Italian herb seasoning, and sometimes a combination of ground beef, veal, and pork [2].

Should Italian meatballs be pink in the middle? ›

The best way to cook meatballs is to shallow fry them, preferably in a non-stick pan with a little vegetable or sunflower oil. They'll take around 10-15 mins over a medium heat, depending on their size. Cook until they are no longer pink in the middle and any juices run clear.

Why are my meatballs pink on the outside? ›

Small amounts of carbon monoxide can be emitted from inefficient burning of gas flames in gas grills or ovens. This too can combine with the myoglobin in meat, causing it to retain its pink color (though usually just on the surface) even when well cooked.

How do real Italians eat meatballs? ›

In Italy, meatballs are most often a stand-alone dish. Called polpettes, Italian meatballs are often served sauceless and are much smaller than the meatballs you're probably used to. Traditional Italian meatballs typically contain equal portions of meat and soaked bread, and other additions such as egg and vegetables.

Is it better to bake meatballs at 350 or 400? ›

After all of the Italian meatballs I've been making lately, I consider myself a meatball expert. A good rule of thumb is to bake meatballs for 25-30 minutes at 350 degrees fahrenheit.

Should I bake my meatballs before putting in sauce? ›

Spray generously with cooking oil spray and bake for 12 minutes, or until just cooked though. Broil (grill) on high heat in the last 2 minutes of cooking time to get them crispy and browned. While meatballs are baking, make your sauce.

Should eggs be beaten for meatballs? ›

Add a lightly beaten egg, but not too much. Egg acts as a binder for the ingredients, but you only need a small amount. One small egg will do for one pound of minced meat. Alternatively, if you're following an egg-free diet, you could soak fresh bread in milk, squeezing out any excess milk, to use as a binder.

Should I cook meatballs before putting in sauce? ›

You can brown the uncooked meatballs in a sauté pan before adding them to the sauce. You can brown them in the oven. Or you can skip browning altogether and put the raw meatballs straight into the sauce to cook.

Why are my Italian meatballs hard? ›

Usually if meatballs are dense or heavy then it is because the meatball mixture has been handled too much and the minced (ground) meat has become compacted. It may help to use beef with a slightly higher fat content, as the extra fat will provide a little extra moisture.

How to tell if a meatball is undercooked? ›

If you don't have a meat thermometer, there are three visual checks that must done. Pierce the thickest part of the meat with a fork or skewer and check that: The juices run clear. It is piping hot all the way through (it should be steaming)

How do you tell if meatballs are cooked through? ›

Place the sheet pan with the meatballs into the 350 degree f oven for 25-30 minutes. Remove the baking sheet from the oven. Check the meatballs with a meat thermometer to make sure they are 165 degrees in the middle.

Can ground beef meatballs be a little pink? ›

The color of cooked ground beef can be quite variable. At 160 °F, a safely cooked patty may look brown, pink, or some variation of brown or pink.
