Hi Jean – There are approximately 2 1/4 teaspoons in the 0.25-ounce (7g) packets. https://redstaryeast.com/red-star-products/red-star-quick-rise-instant-yeast/

Made this in my bread.machine today. Although the directions doesn’t say if it is a 1, 1.5 or 2 lbs loaf size, I guessed worst case scenario that it was 2 lbs to set the machine. Rose too high – slightly stuck to the machine lid and collapsed while baking, but I loved the texture and flavor. Super tender, just like a store bought sliced sandwich bread. I will try this again and see if I can keep it from collapsing, as I have been wanting a super soft white bread recipe.

Hi Pam – A 1 1/2-lb. loaf size machine is typically used for 3 cups of flour recipes. I’m sorry to hear that your loaf rose too high and collapsed, but I’m glad you still enjoyed the homemade bread! We’d be happy to help troubleshoot, contact us here.
